I'm a fan of things that I can make ahead during the month of November and that last for many meals while being able to be modified for each meal depending on my mood. Quinoa and spinach bites are one of those items. First, you need to get the recipe from here: www.skinnytaste.com/2013/06/quinoa-and-spinach-patties.htmlModifications to this recipe are as follows: - Instead of scallions, I use a small to medium size onion. I chop the onion using my mandolin slicer with the "dice" blade.
- Instead of oil, I use cooking spray since I cook these in mini cupcake pans rather than on a skillet on the stove. Spray the pans just before the batter is completely mixed and ready to be spooned into the pan.
- Once batter is made, spoon into mini cupcake pans until the batter is level with the pan. Bake in a 350 degree preheated oven for about 10 to 15 minutes. Remove from oven and let cool before removing bites from pan.
One serving is seven bites. You can eat them as is or cut them and use them in sandwiches/wraps. I'm sure there are plenty of other uses for these nifty, filling little bites.
